Christmas is my favorite time of year, and freshly baked gingerbread cookies are a must-have for the holiday season. I have always been a fan of anything flavored with ginger, so it’s no surprise that these cookies are a staple in my Christmas traditions. This year, I decided to add a little extra magic to my cookies by infusing them with marijuana. And who better to turn to for inspiration than my good friend and highly regarded cannabis chef, Cheri Sicard.
Sicard’s famous Ganja Gingerbread recipe takes these traditional cookies to a whole new level with her homemade cannabutter. The sweet and lightly spiced cookies are not overpowered by the weedy taste often associated with edibles, thanks to the perfect ratio of cannabutter in the recipe. As with all edibles, it’s important to start low and slow and build up, especially since the taste of the bud butter is not prominent in these cookies. You might even forget that they are infused, so it’s important to be cautious and enjoy responsibly.
There are so many reasons to love these Ganja Gingerbread cookies. Not only are they quintessentially Christmas with their aromatic spices and sweet molasses and brown sugar, but they are also incredibly fun to decorate. You can use traditional gingerbread person shapes or get creative with cannabis leaf cookie cutters. Using the cannabis leaf shape also helps to avoid any confusion about the cookies being infused.
These cookies are also freezer-friendly, making them a perfect make-ahead treat for the holiday season. Just be sure to chill the dough for at least two hours before rolling it out. This not only makes it easier to work with but also helps the cookies maintain their shape while baking.
I followed Sicard’s recommendation and used cannabis leaf cookie cutters for my cookies. Once they were out of the oven, I let them cool before decorating them with store-bought colored icing pens. It was a fun and festive activity, and I can’t wait to see if these Ganja Gingerbread cookies are Santa-approved on Christmas morning.
